Make the Most of Summer’s Best Produce

A traditional caprese salad is a summer staple, however, you are going to want to give this version a shot too! From the moment you get to bite into that first juicy peach of the season you know summer has truly arrived. And with two wonderful summer produce items at the tips of our fingers, we should take advantage and enjoy them often….and why not together!?

Pairing summer’s juicy peaches with your meaty tomatoes, creamy mozzarella cheese and freshly garden-grown basil makes for an unforgettable summer salad. It is the perfect appetizer or side dish to bring to a cookout or party – memorable and delicious.

Your fresh peaches help to bring an extra bout of sweetness to the dish so consider swapping your traditional balsamic glaze (which has added sugars) for a balsamic vinaigrette.

Peach Caprese Salad, 4 servings
2 peaches, sliced into 8 pieces
2 tomatoes, sliced into 8 pieces
fresh mozzarella, sliced into 16 pieces
1 cup fresh basil leaves
¼ cup extra virgin olive oil
¼ cup balsamic vinaigrette
salt and pepper to taste

Layer tomato, peach and mozzarella slices on a plate, alternating the pattern. Evenly place basil over top. Drizzle with olive oil and balsamic dressing. Season with salt and pepper.

*If you’re firing up the grill for the rest of dinner, considering slightly charring tomatoes and peaches to bring out some extra tasty flavors. It’s like candy on a hot summer’s day!
